Cauliflower "Fried Rice"

  • 1 medium head cauliflower or 24 ounces cauliflower florets
  • Cooking spray
  • 2 large eggs
  • Pinch of kosher salt
  • 1 tablespoon toasted sesame oil
  • 1/2 small onion, finely chopped
  • 5 scallions, chopped, whites and greens kept separate
  • 1/2 cup frozen peas and carrots
  • 2 garlic cloves, minced
  • 1/4 cup reduced-sodium soy sauce, or more to taste
  • For protein (optional), chicken, shrimp or whatever you would like
  1. Remove and discard the core of the cauliflower.
  2. Coarsely chop it into florets, then place half of the florets into a food processor.
  3. Pulse until resembles grains of rice (don't over process or it will be mush).
  4. Set aside and repeat with the remaining cauliflower. Or just chop it.
  5. Heat a large nonstick pan over medium heat and spray with oil.
  6. In a small bowl, beat the eggs with the salt.
  7. Pour the eggs into the pan and cook, turning s few times, until set, 1 to 2 minutes.
  8. Transfer to a plate.
  9. To the pan, add the sesame oil,onion, scallion whites, peas, carrots and garlic.
  10. Cook, stirring, until soft, 3 to 4 minutes.
  11. Increase the heat to medium high, add the cauliflower "rice" and soy sauce.
  12. Stir, cover, and cook, stirring frequently, until the cauliflower is slightly crispy on the outside but tender on the inside, 5 to 6 minutes.
  13. Add the egg, remove the pan from the heat, and stir in the scallion greens.
  14. Divide among 4 bowls and serve hot.
Additional Tips
For a main dish add in chicken, shrimp, or whatever for your protein.
