Almond-Pecan Date Truffles

  • 1/3 cup apple juice
  • 1 package (8 ounce) chopped dates
  • 1 cup finely chopped pecans
  • 1 1/4 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup ground almonds
Methods/steps
  1. In a microwave, warm apple juice.
  2. Stir in dates; let stand for 5 minutes to soften, stirring occasionally.
  3. Remove dates from apple juice; discard liquid.
  4. Transfer dates to the bowl of the food processor fitted with the blade attachment; process until smooth.
  5. Add pecans and spices; pulse just until combined (mixture will be thick.)
  6. Shape mixture into 1 inch balls; place on a waxed paper lined baking sheet.
  7. Refrigerate, covered, for 30-60 minutes.
  8. Roll date balls in almonds.
