  • For the crust:
  • 1 stick unsalted butter, at room temperature
  • 1/2 cup sugar
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • For the filling:
  • 3/4 cup sugar
  • 2 large eggs
  • 1/2 cup fresh Meyer lemon juice
  • 2 tablespoons grated Meyer lemon zest
  • 2 tablespoons flour
Methods/steps
  1. Preheat the oven to 350 degrees.
  2. Spray an 8x8 inch baking pan with baking spray and set aside.
  3. Making the crust.
  4. In a bowl of a stand mixer, beat the butter and sugar until light and fluffy.
  5. Add the flour and salt and beat until dough starts to come together.
  6. Place the dough into the prepared pan and press firmly onto the bottom.
  7. Bake for 20 minutes, until lightly brown around the edges.
  8. Remove from the oven and allow to cool while you make the filling.
  9. In the bowl of a stand mixer, beat the sugar and eggs until smooth.
  10. Add the flour, lemon juice and zest and mix to combine.
  11. Pour the filling over the crust and bake for 20 minutes, or until the filling has set.
  12. Remove from the oven and place on a wire rack to cool completely.
  13. Cut into squares and generously dust with additional powdered sugar.
  14. Any leftovers can be covered and stored in the refrigerator.
