Black-eye Pea Salsa

Description This is a quick and easy appetizer dish that can go with just about anything.

2 cans black eye peas, drained and rinsed
2 cans shoe peg corn, drained and rinsed
1 can hominy, drained and rinsed

1 red pepper, seeded and diced
1 green pepper, seeded and diced
4 roma tomatoes, seeded and diced

1 jalapeno, seeded and minced (optional)

4 Tablespoons cilantro, chopped
1 bunch scallions (I think these are green onions, that's what I use), chopped
1 red onion, chopped

Juice of 1 lime
1 cup Italian dressing
1 cup Sweet and Sour French dressing
Methods/steps
Mix in a bowl and chill.  Serve with tortilla chips.
