  • 2 pounds beets
  • 1 tablespoon cornstarch
  • 1/2 cup sugar
  • 1/4 cup water
  • 1/2 cup vinegar or lemon juice ( we always used vinegar)
  • 1/2 teaspoon salt
Methods/steps
  1. Prepare  and cook beets.  (We would wash them and then boil them with the skins on and about 2 inches of root still on and about 1 inch of the stem.  When cooked the skins and stem will slide off.)  Then dice or slice.
  2. Make a sauce by cooking cornstarch, sugar, water, vinegar and salt together for five minutes.
  3. Pour sauce over diced or sliced beets and let stand a few minutes before serving.
Additional Tips
The sauce gives the beets a zing and the beets give the sauce a nice beet color!
