Lemon Bars

Crust:

2 cups flour

1 cup butter

1/2 cup powdered sugar

Filling:

4 eggs, beaten

2 cups sugar

1/4 teaspoon salt

1 teaspoon baking powder

1/4 cup flour

1/2 cup lemon juice

powdered sugar for topping

1 1/2 cups coconut, optional

 

Methods/steps

1. Blend crust ingredients and press into a 9 X 13 inch pan.

2. Bake at 350 degrees for 20 minutes.

3. Blend filling ingredients in a big mixing bowl, and pour over baked crust while still hot.

4. Bake at 300 degrees for 25 minutes.

5. Sprinkle with powdered sugar and let cool before cutting.

6. Cut bars with a wet knife.

Additional Tips

The lemon is a good throat soother!

 These bars don't really brown, the edges get set and the middle is no longer wiggly when they are done.  The powdered sugar makes for a nice topping.
