Overnight Buns

60 buns
  • 1 package yeast
  • 3 cups warm water
  • 1 cup sugar
  • 1 tablespoon salt
  • 1/2 cup oil
  • 2 eggs, beaten
  • about 10 cups flour
  1. Dissolve 1 package yeast in 3 cups warm water.
  2. When dissolved, add sugar, salt oil and eggs.
  3. With a wooden spoon mix in about 10 cups flour, or just enough to make a soft dough.  When it gets to thick for the spoon, knead it in with your hands, but keep it very soft, almost sticky.
  4. Mix these about 5:00 PM.
  5. Knead down every hour.
  6. Then at 10:00PM, make into buns and put into greased pans. (Crisco is a good thing to use for greasing your pan.  It helps them not to stick to the pan).
  7. Cover with a lightweight cloth and then waxed paper on top the of the cloth.
  8. Let stand on table or counter top (not too warm a place.)
  9. In the morning, bake at 350 degrees for 15 to 20 minutes.
  10. Be careful not to bump or jar them, for they are very light.
Additional Tips
You can easily make these into clover leaf rolls, cinnamon rolls, monkey bread or whatever you like. Also we made a double batch and used 8 cups regular wheat flour and 8 cups better for bread white flour and they were very good.
