Caramel Chocolate Cookies

  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 3/4 cup cocoa
  • 1 cup butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 teaspoons vanilla
  • 2 eggs
  • 1 cup chopped pecans, divided
  • 48 Rolo caramels ( a 9 ounce package)
  • 1 tablespoon sugar
  • 4 ounces vanilla candy coating
Methods/steps
  1. In a small bowl, combine well, 2 1/2 cups four, 1 teaspoon baking soda and 3/4 cup cocoa.
  2. In a large bowl, cream 1 cup butter, 1 cup white sugar and 1 cup brown sugar and beat until light and fluffy.
  3. Add 2 teaspoons vanilla and 2 eggs and beat well again.
  4. Add flour and 1/2 cup chopped pecans.  Blend well.
  5. For each cookie, with floured hands, shape about 1 tablespoon dough around 1 caramel candy (rolo caramel), covering it completely.
  6. Mix 1/2 cup chopped pecans and 1 tablespoon sugar in a cereal bowl.
  7. Press one side of ball into the sugar and nuts and place, nutty side up, on ungreased cookie sheet, 2 inches apart.
  8. Bake at 375 degrees for 7 to 10 minutes until set and slightly cracked.
  9. Melt 4 ounces vanilla candy coating and drizzle over cookies.
