Broccoli Cheese Chowder(family favorite)

Description A  very good broccoli cheese soup!Also very good to spoon chowder into a split baked potato!

  • 2 cups water
  • 1 cup celery, chopped
  • 1 cup carrots, chopped
  • 1/2 cup onion, chopped
  • 1 pound fresh broccoli, washed and chopped
  • 1/2 cup butter
  • 1/2 cup flour
  • 1/4 teaspoon pepper
  • 4 cups milk
  • 1 pound American cheese, cut in 1/2 inch cubes or 4 cups grated cheddar cheese
  • 2 cups ham, cut in 1/2 inch cubes
Methods/steps
  1. In a 4 quart stock pan, combine water, celery, carrots and onions.
  2. Bring to a boil; reduce heat.
  3. Simmer, uncovered, for 5 minutes or until tender/crisp.
  4. Add broccoli, cook until tender/crisp, about 4 to 5 minutes.  (To keep the broccoli bright green, leave the cover slightly ajar.)
  5. DO NOT drain vegetables.
  6. To make sauce, melt butter in large sauce pan, blend in flour and pepper.
  7. Cook, stirring for 1 minute.
  8. Stir in milk; cook intil mixture thickens (very important)
  9. Stir in the cheese and cook until melted; add the ham cubes.
  10. Combine cheese mixture with undrained vegetables; stir to blend.
Additional Tips
'Tis very important to thicken the milk and flour mixture, 'cause once you add the cheese it will not thicken any more, but actually become a little thinner.  Very good and worth the extra effort!
