Open-faced Egg Salad Sandwiches

  • 2 tablespoons sugar
  • 1 tablespoon flour
  • 3 tablespoons vinegar
  • 1/2 teaspoon salt
  • 1 beaten egg
  • 1 tablespoon butter
  • 1/2 cup milk or cream
  • 1 - 8 ounce package cream cheese
  • 1 tablespoon chopped onion
  • 6 hard boiled eggs, chopped
  • 1/2 small can pimento pieces
Methods/steps
  1. Mix sugar, flour, vinegar, salt, beaten egg, butter and milk.  Cook until thick.
  2. Add cream cheese, onion, hard boiled eggs and pimento.
  3. Cool.  Can be stored several days.
Additional Tips
Good served on round breads, rusk buns or half of buns.  No need to put a top on it! Also good eaten with club crackers.
