  • CAKE:
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 /4 teaspoon salt
  • 1  1/2 cups canola oil
  • 2 cups sugar
  • 4 eggs
  • 2 cups finely grated carrots  
  • FROSTING:
  • 1/4 cup + 2 tablespoons butter
  • 6 ounces cream cheese
  • 4 cups powdered sugar
  • 1 teaspoon vanilla
  • 3/4 cups chopped pecans  
Methods/steps
  1. Mix flour, baking powder, baking soda, cinnamon and salt.  Set aside.
  2. Combine oil and sugar and mix well.
  3. Add eggs, one at a time, beating well after each egg.
  4. Gradually add carrots.
  5. Add dry ingredients and mix well.
  6. Put in greased and floured 9 X 13 inch pan.
  7. Bake 50  to 60 minutes at 350 degrees.
  8. Let cake cool.
  9. When cake is cool, frost.
  10. For frosting, mix butter and cream cheese and beat until light and fluffly.
  11. While still beating the frosting, gradually add the powderd sugar and vanilla.
  12. Put frosting on top of cake and top with pecans, if desired.
Additional Tips
For small cake or 1/2 the size a regular 9X13 pan: 1 cup flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon cinnamon 1/8 teaspoon salt 3/4 cup oil 1 cup sugar 2 eggs 1 cup finely grated carrots Follow directions for 9 X 13 cake.
