Cheesy Tomato Bruschetta

4-6 (2 slices per person)

1 1/2 cups seeded and chopped ripe roma tomatoes (4 -5 tomatoes)

1/4 cup red onion, finely chopped

2 tablespoons extra virgin olive oil

1 teaspoon balsamic vinegar

1 teaspoon red wine vinegar

1/2 cup finely shredded mozzarella cheese

 2 tablespoons shredded parmesan cheese

1/2 tesapoon salt

1/4 teaspoon pepper

1 french loaf of bread

1 clove garlic, cut in half

Methods/steps

1. Mix the first 9 ingredients in medium bowl. Cover and refridgerate at least 2 hours.

2. To serve: Slice loaf into 1/2 inch thick slices.

3. Brush both sides of bread slices with additional olive oil.

4. Broil bread slices for approximately 1-3 minutes on each side to toast.

5. Gently rub both sides of warm, toasted bread with cut side of garlic clove.

6. Top bread slices with tomato mixture, place on baking sheet.

7. Broil 1-3 minutes to warm, and for cheese to melt.
