Skillet Corn Bread

Description This corn bread is made in a cast iron skillet and very good!

  • 1 cup cornmeal
  • 1/2 cup flour
  • 2 teaspoons baking powder
  • 3/8 teaspoon salt
  • 3 tablespoons butter
  • 2 tablespoons sugar
  • 1 egg
  • 1 cup milk
Methods/steps
  1. 1. Preheat oven to 400 degrees.
  2. 2. Grease a 7 1/2 inch cast iron skillet and line with parchment paper.
  3. 3. In a large bowl, whisk together cornmeal, flour, baking powder, sugar and salt. 
  4. 4. Mix in the egg, butter and milk, until it is a rich thick batter.
  5. 5. Scrap batter into parchment paper lined skillet.
  6. 6. Bake 25-30 minutes until lightly browned and a toothpick comes out clean in the center.
Additional Tips
I use oil instead of butter, but then you use a little less oil. Recipes say to substitute 1cup butter use 7/8 cup oil. Double it for the large skillet.
